Try growing these full-sun salad greens in container gardens or window boxes during the cooler months.  Add some violas to the mix for beautiful, edible color bowls for the garden and patio. 

ARUGULA (Eruca sativa) (aka ‘Rocket Salad’ because it grows like a “rocket”): a pungent, peppery leaf, exceptional addition to salads. Flowers quickly in the heat, so best grown in winter and spring.  Fast growing.  Recipe:  arugula, sliced beets, crumbled feta cheese, and carpaccio with a drizzle of extra virgin olive oil, salt & pepper.  Days to maturity:   21 baby, 30 full size.

LETTUCE ‘Green Oak Leaf’ or ‘Red Oak Leaf’ (Lactuca sativa):  keep cutting, and these plants keep on growing!  Sweet leaves, never bitter.  Mature and baby leaves are equally delicious.  Easy to grow.  Days to maturity:  28 baby leaves, 48 mature.

MUSTARD 'Green Wave' (Brassica rapa): a delicious winter green to grow full size for stir frying, or use baby leaves in salads for zing and zest!  Highly adaptable.  Frilly leaves are hot and spicy.  Stir fry with with garlic, red pepper flakes, and toasted pinenuts. Days to maturity:  21 baby, 45 full size.

MUSTARD 'Osaka Purple' (Brassica juncea):

a small leaf version of Mustard ‘Red Giant’.  Use miniature greens for salads, or grow large leaves for stir fries and soups.  Fantastic taste, compact growth.  Days to maturity:  21 baby, 40 full size.

Parsley, Flatleaf or Curlyleaf (Petroselinum crispum):

excellent cold weather herb, and tolerates some shade.   Parsley attracts pollinating insects to the garden, and is very high in Vitamins A, C and iron.  Cleansing and refreshing to the digestive system.
