Scarborough Fair was a seaside town in Middle Ages England, host to a 45-day trading event beginning on August 15th of every year. The author of the original words to Scarborough Fair is unknown. (During the Middle Ages, people often did not take credit for their songs or their art.) Today, Scarborough Fair is a quiet seaside town in North Yorkshire.

PARSLEY (Petroselinum crispum)
Contains more Vitamin C than an orange (by volume), as well as Vitamin A, a few B Vitamins, calcium and iron. When planted in a vegetable garden, it’s supposed to repel asparagus beetles, so don’t plant this if you love asparagus beetles.

Wash & dry a bunch of parsley and roughly chop. Peel and chop three cloves of garlic, and place both garlic and the parsley in a food processor. Puree, while adding extra virgin olive oil and ricotta cheese . . . until you have a nice, bright green puree. Refrigerate until supper, sprinkle with some freshly grated Parmigiano-Reggiano. Serve with chilled shrimp, cold grilled chicken or leftover grilled lamb.
SAGE (Salvia officinalis)
Smells like one enormous Thanksgiving Dinner. From the Latin word, “salvation.” In the Middle Ages, Martin Luther is credited with saying, “Why should a man die whilst sage grows in his garden?” Indeed!
D.I.R.T. Girl Cuisine: Oven-Fried Chicken
Mince the leaves of fresh sage, grate the peel from one lemon, and combine with dry bread crumbs, a little flour, salt & pepper. Generously dredge boneless chicken breasts in the mixture, place in a hot oven (350), and bake until cooked through. Serve with lemon wedges to juice over the chicken.
ROSEMARY (Rosmarinus officinalis)
Mistress is Master. If a rosemary bush grows vigorously in the garden, it means that a woman is the Head of Household. (Wives, hide the pruning shears from humiliated husbands.)

Add finely chopped rosemary to a fresh fruit salad composed of pineapple, blueberries, kiwi, and strawberries. Top with dried cherries soaked in Ruby Port for 60 minutes and serve to all the strong-willed wives you know.
THYME (Thymus vulgaris)
An ideal plant for edging borders in the garden, or trailing from hanging baskets and containers. Thymus is from the Greek word “courage,” therefore a “must have” for Georgia gardeners who, in order to have a garden at all, must first beat the living daylights out of the red clay before planting the first root.
D.I.R.T. Girl Cuisine: Roasted Peppers & Thyme
Roast several red bell peppers under the broiler. Cover for 15 minutes to allow skins to “sweat.” Peel the peppers, slice in strips. Dribble the peppers with extra virgin olive oil, add a sprinkle of Lemon Thyme leaves, a grating of salt & pepper, and serve over a bed of bed of Wild Rice, with crumbled Feta Cheese.
